Ammonium ferric citrate, also known as ammonium ferric citrate, is a compound salt of iron, ammonia and citric acid. It is generally used as a blood tonic, can be prepared into blood tonic or syrup, and can also be used for MR rapid imaging of upper abdomen and MR cholangiopancreatography.
1. Adding ammonium ferric citrate to salt as an anti-caking agent is a new production technology introduced by China's salt industry in recent years, drawing lessons from the experience of developed countries such as Japan and South Korea. Replacing the original potassium ferrocyanide with ammonium ferric citrate will be safer and more secure from the perspective of maintaining food safety. This new anti-caking agent is mainly used in a series of green food edible salts developed by the salt industry. At present, the market share of salt produced by this anti-caking agent in some provinces and cities has reached over 90%.
2. The food additive ammonium ferric citrate has been specified in Announcement No.23, 2010 of the former Ministry of Health that it can be used in salt and salt substitute products, and its function is an anti-caking agent.
